Easy Chicken Fajita Foil Pocket Meal

There are a lot of things that you can do with nice, heavy-duty aluminum foil. One of those things is making Chicken Fajita foil pocket meals. They are a super easy dinner to make on the road and your family will love them! 

Chicken Pajita Foil Pockets (serves 4)

1 packet 90 second rice (pre cook) 

1 small sliced onion

1 small sliced bell pepper

4 small boneless chicken breasts or thighs

1 can of black beans or charro beans(drained) 

1 small jar of your favorite salsa

1 packet Taco Seasoning mix

1 cup grated cheese

I always have heavy duty foil in the RV.  It makes pocket meals mess free.
Start with a large sheet of foil. Fold edges up to create a bowl. Spray with vegetable oil.


Now start adding (layering)all the good stuff 

Spoon rice into foil bowl
Sprinkle with taco seasoning, salt and pepper
Add sliced onions and bell peppers, and chicken

Sprinkle with a little more taco seasoning mix, salt & pepper

Add beans and top with your favorite salsa (about 3-4 Tablespoons)
Top with cheese

Now roll the sides together making sure it is secured tightly.

Bake 30 minutes at 350 degrees in the oven, or on the grill.    Let cool a few minutes before opening so steam does not burn you.

Top with sour cream, chopped green onions or guacamole dip and serve with some tortilla chips!

Remember, you can add anything to a foil packet and make it your own!!  These are great to prepare early and refrigerate until you are ready to bake.
